Bacon Cheeseburger Tater Tot Casserole
1-1/2 lbs. ground beef
½ cup onion, chopped
2 cloves garlic, minced
1 cup mixed vegetables, peas, carrots, green beans, lima beans, corn
½ cup green peas
1 can cream of mushroom soup
1 can cream of chicken soup
½ cup sour cream
1 T. Worcestershire sauce
¼ cup parsley, chopped
1-2/3 cup mild cheddar, shredded
32 oz. frozen tater tots
Sprinkle of salt
1-1/4 cup mild cheddar cheese
6 slices pepper bacon, cut, fried & drained
Preheat oven to 350°. Over medium heat, fry ground beef until halfway done. Add chopped onions and garlic and cook until ground beef is no longer pink. Drain. Return to skillet and add all the vegetables. In a separate bowl, combine soups, sour cream, ½ the parsley and Worcestershire. Fold soup mixture into beef & vegetables. Gently spread meat mixture into 9x13” greased baking pan. Top with 1-2/3 cups cheese. Arrange frozen tater tot’s in rows on top of the cheese & sprinkle lightly with salt. Top with remaining parsley. Bake at 350° for 40 minutes. Remove from oven and top with 1-1/4 cups cheese and cooked bacon. Bake additional 10-12 minutes until cheese is melted & dish is bubbly.
